Pantry Pasta

Introduction

Adapted from a Rachael Ray recipe. She used sardines, but I can't stand them, so I sub either canned salmon or tuna packed in water. Play around with herbs and spices to make it to your taste! Number of Servings: 2

Ingredients

    4 oz. whole wheat penne pasta
    1 tbsp extra virgin olive oil
    1 can chunk light tuna in water
    2 cloves garlic, minced
    salt, pepper, other spices to taste

Directions

1. Cook the pasta according to package instructions; rinse and drain.

2. In a large skillet, heat the olive oil over medium heat. Drain the tuna and add to the olive oil. Season to taste and sautee for about 3 minutes or until heated through. Add the garlic and cook for another 2-3 minutes.

3. Add the cooked penne to the skillet and stir so the pasta is evenly coated and the tuna is distributed throughout. Enjoy with a salad or a nice piece of crusty garlic bread.

Makes 2 3-oz. servings.
