Ingredients

    Frozen or canned corn 2C
    Milk 1% 2C
    Smart balance
    parsley 1 Tbl
    onion powder 1Tbl
    celery 1/4 C
    carrot 1/4 C
    Splenda 1 Tbl
    Hard boiled Egg 2 large
    Coffee Mate 2 Tbl
    Ritz crackers Reduced fat 6 rounds

Directions

Combine all ingredients except coffee mate and crackers and simmer until carrot and celery are soft. You may add black pepper if you like. Stir in Coffee Mate and crushed crackers until blended and serve. Makes about 5-6 Servings
