This recipe could be altered many ways depending on your preferences. Add spice with red pepper flakes, chili powder, etc. Made vegetarian by omitting the chicken breast and replace the chicken broth with veggie broth. Recipe could also be made with beef or pork instead of chicken. Pre cut veggies in your grocers deli section and Rotisserie chicken make this recipe quick and easy.Serve with brown rice or without. Ingredients

1 cup Brocolli
1/2 cup Cauliflower
1/2 cup Shreaded Carrots
1/4 cup Sugar Snap Peas
4 cloves Garlic minced
4 Tbsp Soy Sauce (low sodium/lite)
3 ounces Chicken Breast (Rotisserie works great)
1/4 cup Chicken Broth (reduced sodium, fat free)
1 Tbsp Canola Oil
Optional:
1 tsp Red Pepper Flakes
Directions
If using raw chicken, cook chicken in 1 tsp oil and 2 tbsp chicken broth. Once chicken is fully cooked, set aside. Add remaining canola oil and chicken broth to pan. Add Cauliflower and cook for 3 minutes, stirring often. Add broccoli and cook for another 2 minutes. Add remaining veggies and cooked chicken. Stir well and cook for 2 minutes. Add garlic and soy sauce (optional red pepper flakes too) and cook two more minutes. Serve with or without brown rice.
Makes one large serving sure to please.
