This brown and wild rice dish is moist and yummy and easy to make. You can swap out the veggies for a different spin or add chicken. Ingredients

    1/2 Tbls. Olive Oil
    3 Tbls. Diced Onion
    2 Tbls. Pasilla or Anaheim Chile (chopped)
    2 Tbls. Bell Pepper -I use Red (chopped)
    1 to 2 Tbls. Grated Carrot
    3/4 cup Fresh Mushrooms (chopped)
    2-3 cloves Fresh Garlic (diced)
    1 teasp. salt
    1 teasp. pepper
    2 teasp. ground coriander
    1/2 teasp. powdered garlic
    1 cup Brown & Wild Rice mixture
    2 1/8 cups Chicken Broth



Directions

Sweat onions and garlic in olive oil, add other vegetables and cook until tender. Season with salt, pepper, coriander and powdered garlic. Add rice and cook a minute or two longer to "toast" the rice. Add broth and bring to a simmer. Turn heat down to the lowest setting, cover and cook for 40 mintues
