Tofu Noodle Soup

Introduction

Add more protein with more tofu, and less carbohydrates with fewer noodles. You can also easily reduce the sodium using low sodium broth and soy sauce. Ingredients

    1/2 lb extra firm tofu
    1tbsp soy sauce
    1tbsp sesame oil
    3 1/2c vegetable broth
    1 can vegetable soup, condensed
    10oz frozen chopped broccoli
    4oz dry udon noodles

Directions

Soak tofu in soy sauce and sesame oil, about 30min.
Combine vegetable broth, vegetable soup, broccoli and udon noodles. Bring to a boil then simmer, covered, 5min. Add tofu mixture and heat through.
