Number of Servings: 2

Ingredients

    Portabella Mushrooms, 140 grams sliced
    onion, 1 medium sliced
    Butter, salted, 1 tbsp
    *Canola Oil, 1 tbsp
    Garlic, 3 cloves pressed
    Chicken Breast, no skin, 10 ounces cubed
    Breakstone Fat Free Sour Cream, 5 tbsp
    Milk, nonfat, 2/3 cup
    Chicken stock granules, low sodium, dry, 1 tsp
    Thyme, fresh, 2 tsp (use less if dried)
    Sweet potato, baked in skin, 1 medium

Directions

Saute onion in butter and oil until just soft. Add chicken and mushrooms, keep heat around medium-low and stir often. Scrub and poke your sweet potato and microwave on high for 8-10 minutes while everything cooks. Sprinkle 1T of flour over everything. Whisk together milk, sour cream, fresh thyme, pressed garlic and chicken granules then pour into skillet and let simmer for several minutes. Serve over sliced sweet potato.
