SAUTEED LEMON PEPPER CHICKEN

Submitted by: LENOREMORR

Introduction

From cooks.com adapted with olive oil and country crock instead of butter. Could use less of each or just one. I cook in cast iron and tend to need a little more. Juice of one lemon for less tangy flavor, two as written here. From cooks.com adapted with olive oil and country crock instead of butter. Could use less of each or just one. Really nice --- I had made this before but with loads of butter. Served with fresh green beans. I did add a little water to the pan to deglaze the chicken. - 4/1/09

I fixed this tonight, and it was very good. I used less lemon, since my son doesn't like heavy lemon, but it was very good. I also liked the light flour breading - helped lock in the juices. I used lemon pepper on my own, to give it more lemon taste. Will definitely cook again! - 2/3/09

  • I used lemon zest as well because I LOVE lemon, and added a sprig of rosemary. I stuck to olive oil only and didn't flour the breasts as I don't find it necessary. I also deglazed the pan with a splash of white wine and that made a remarkable sauce! - 1/13/13

  • I made this with just the olive oil and no butter. I would recommend flattening the chicken breasts or making sure they are sliced so they cook all the way through. Served it with kale chips and jasmine rice. - 2/11/11

  • This turned out great!! I had a few alterations, such as using the full chicken breast and thighs and not cutting them up, cooked a little longer but it turned out super moist! Yummy!! - 12/29/09
