Sortof Colcannon

Introduction

Traditional Irish Colcannon is sauted greens (usally hardy greens like mustard or chard in lots of butter) with cabbage mixed in with mashed potatoes. This was a recipe of things we had around the house to cook before they went bad (sounds good, huh?). Number of Servings: 8

Ingredients

    8- Yukon Gold Potatoes (I used six but it needed a couple more)

    1- head of cabbage

    1-large yellow onion (this is probably optional though this recipe doesn't have a whole lot of flavor)

    3/4- stick of butter (I needed MORE FLAVOUR)

Directions

Cut potatoes and onions into 1-1.5 in. pieces

Slice Cabbage into strips

Steam or boil potatoes until soft (steaming seems to work best for me)

In separate pot put onions, cabbage, butter and about 1/4 cup of water. Turn heat to medium high and cover (takes about 15-20 min to get soft)

When potatoes are soft you can mash them up. Then add the onions and cabbage with any liquid that is in their pot to the mashed potatoes and mix.

I'm estimating a serving around 1-1.5 cups.

You will definately want to add salt and pepper but I saved it until serving.

I haven't tried it yet but I am willing to bet that if you add a little flour these would make some good potato pancakes (I have done it with actual Colcannon and it was very good)
