Introduction

this is a moist lowfat muffin recipe that is great for breakfast or snack. Freezes well and is delicious. this is a moist lowfat muffin recipe that is great for breakfast or snack. Freezes well and is delicious.
Number of Servings: 18

Ingredients

    1 15 ounce can of pumpkin
    4 eggs
    2 teaspoons vanilla
    2 med. to large carrots(grated)
    1 1/3 cups non-fat milk powder
    3/4 cups flour
    2 tble.pumpkin pie spice
    4 tsp. cinnamon
    2 tsp. baking soda
    1/2 cup splenda for baking
    1/2 cup raisins

Directions

preheat oven to 350 degrees. Mix first 4 ingredients together. Then sift together powdered milk,flour,pumpking pie spice,cinnamon and baking soda. Add splenda and raisins then add to wet ingredients.
Bake 15-20 minutes
Makes 18 muffins
