Love coconut and curry? This is divine! Again...why add EVOO when you can simmer onions in a bit of coconut milk? :)

  • I like it! I didn't have any fresh ginger, so I added about 2 tsp of ground ginger instead. Also, the only red peppers I had on hand were a jar of fire-roasted red peppers, which seem to be going nicely. I was also out of curry paste, so added curry powder (just had to guess the amt). Still good!! - 10/1/09

  • Made without shopping, so without the red pepper, with garlic powder instead of real garlic in a pinch. I cooked longer, as my lentils didn't seem to cook this fast. Needed significant water (sorry I didn't measure), but very yummy! Added soy sauce too. Will make this again. - 3/26/09
