Tilapia with mushrooms

Introduction

This is very simple and the lemon juice adds a nice complement to the mushrooms. It's kind of like a scalopini sauce. This is very simple and the lemon juice adds a nice complement to the mushrooms. It's kind of like a scalopini sauce.
Number of Servings: 4

Ingredients

    Tilapia filet cut into 4 pieces about 2 oz each
    2 cups sliced fresh mushrooms (I like small portabello)
    1 cup chopped onion
    4 cloves garlic chopped
    3 tbsp olive oil
    2 oz fresh lemon juice
    2 oz chicken broth

Directions

Place large skillet over medium high heat. Add 3 tbsp of olive oil. When hot, add garlic and onions. Cook until translucent. Add fish and cook until fish is done and slightly brown, about 2-3 minutes per side for filets of average thickness. Remove fish from pan. Add mushrooms and cook until they give up juice and are begin to soften. Add Lemon juice and chicken broth. Cook for about 3-5 minutes. Then add fish back in. Server over brown rice. Serves 4.
