1 whole egg
3 egg whites
1 slice swiss
3 aspargus spears, sliced into 1/4ths
garlic clove, minced
1 tsp olive oil
Whip egg and white together. Pour into pan and cook until set about 3-5 minutes. Place asparagus and cheese on one side of egg pancake and fold one side over. Cook until cheese melts about 2-3 minutes.
Plate and serve with a dollop of home made salsa if desired.
