Ally's Bruschetta Chicken Bake

Introduction

ADAPTED from kraftfoods.com for my tastes. Great way to get some spinach in to your diet (Vitamin A and Iron) if you don't particularly like the taste. ADAPTED from kraftfoods.com for my tastes. Great way to get some spinach in to your diet (Vitamin A and Iron) if you don't particularly like the taste.
Number of Servings: 5

Ingredients

    1 can diced tomatoes; undrained.
    1/2 pkg. (3 oz) Stuffing Mix
    1 boneless skinless chicken breasts, cut into bite-sized pieces.
    1-1/2 Cup Mozzarella cheese.
    1 cup chopped spinach

Directions

Preheat oven to 400F. Place chicken in 2-1/2 qt baking dish. Layer ingredients over chicken as follows: 1/2 of cheese, spinach, 1/2 of cheese. In a medium bowl place dry stuffing with tomatoes (& liquid), stirring just until moistened. Spread over top of casserole.

Bake 30-35 minutes or until chicken is cooked through.

*I say this yields 5 servings*
