Comfy sandwich

Introduction

Easy and fast sandwich for breakfast or with green salad or a cup of low fat soup for a quick lunch. Easy and fast sandwich for breakfast or with green salad or a cup of low fat soup for a quick lunch.
Number of Servings: 2

Ingredients

    2 English muffins
    2 eggs
    1slices of turkey bologna (cut in four triangles)
    2 slices tomato
    2 thin slices raw onion
    2 tsp ligh mayo
    2 tbsp each fresh oregano and cilantro, chopped, can use basil too

Directions

Toast muffins.
Cook eggs to taste ("fried" in water, scrambled, etc).
Heat up the bologna and place in rack or paper towel to drain extra fat.
Place one egg and 2 bologna triangles in one half of the muffin and top with tomato and onion.
Mix mayo with oregano and cilantro and apply half the mix to other muffin half. Top sandwich.
Repeat with other muffin. Enjoy.
Makes two servings.
