Coconut Curry Quinoa Stew

Introduction

I got this from the box of Ancient Harvest I got this from the box of Ancient Harvest
Number of Servings: 4

Ingredients

    2 tsp olive oil
    1 med leek
    1 small zucchini
    2 celery stalks
    1/2 small yellow pepper
    2 tsp curry (Green)
    2 tsp cumin
    1/3 uncooked quinoa
    2 c water
    1 tsp sea salt
    1 cinnamon stick
    2/3 c red kidney beans
    1/2 c light coconut milk
    fresh cilantro

Directions

Cut up all veggies into small pieces.
Heat oil and add leeks, when leeks get shiny mix in rest of veggies, add spices mix.
Add quinoa, water and milk.
Cover and simmer until all liquid is gone.
Remove cinnamon stick and garnish with cilantro

  • I found this to be inedible, which is weird, cuz I love all of the ingredients. I think I would leave out the cumin. For me, it kills the taste of the curry. Sorry! - 5/24/09

    That is good to know, I havent made this recipe yet, I got it from the box of Quinoa recipes, I noticed the measurement for the quinoa looks weird. I put it in this recipe site to get the exact calorie content. I love Curry and quinoa, so I am sad to hear it.
