Introduction

The beef broth and remaining juice from the beans gives this a great flavor. Hubby and I loved it just as it is.

I wouldn't consider this vegetarian because it used beef broth, but it didn't fit in any other category.

Makes 8 1-cup servings

Number of Servings: 8

Ingredients

    3 cups brown Minute Rice
    2 14-oz cans of fat-free beef broth
    1 can pinto beans
    1 can navy/white beans

Directions

1. Bring 2 14-oz cans of fat-free beef broth to a boil
2. Add 3 cups Brown Minute Rice to pot
3. Turn off heat, cover, and let simmer
4. Open can of pinto beans and drain the thin juice off. Cook in microwave for 1 minute.
5. Open can of navy beans and drain the thin juice off. Cook in microwave for 1 minute.
6. Add both cans of beans and whatever juices remain to the rice and let simmer for 2-3 more minutes.
