Quinoa with Chicken, Spinach, and Tomatoes

I threw this together one night when I was really hungry and needed a quick something with plenty of protein and fiber. It is also good topped with a touch of feta (not included in calorie count as I eat it both ways and it makes tracking way more difficult if feta is in the recipe and I'm not eating feta.Eden brand quinoa seems to have superior nutritional as compared to other brands at the supermarket.

Ingredients

1 c. uncooked quinoa
1 lb boneless, skinless chicken breast tenders
Smoked Spanish Paprika
Cayenne Pepper (or Black Pepper, if you prefer)
Garlic
Oregano
Cinnamon (just a touch will do)
Nutmeg
1 box of frozen spinach
1 can diced tomatoes
Directions
Prepare quinoa according to package directions (my quinoa needed more water, so I dumped in the juice from the tomatoes). Meanwhile, cook the chicken and spices (I rarely measure spices - just use what you like...be careful with the cayenne pepper!) in a medium skillet. Defrost the spinach, squeeze out all the water, and add to the skillet with the chicken. Add the can of tomatoes (I drained mine first, but either way would probably be fine). If you decide to add feta (it's good either way), dump everything into a casserole dish (top with the feta) and bake for about 10 minutes (I couldn't wait that long as I was starving).
