Spanish/Mexican Rice

Introduction
Everybody has it, here's my version! Onion powder used instead of diced onion to trick my picky eaters! Everybody has it, here's my version! Onion powder used instead of diced onion to trick my picky eaters!Number of Servings: 7
Ingredients
-
2.5 cups of white rice
1.75 cups of Petite Diced Tomato (1 can)
2 Tbsp low-fat margarine
1 Tbsp Onion Powder
4 cups Vegetable broth
1 Tbsp Chili Powder
*salt and pepper to taste
Directions
-Melt margarine in large pot on medium/low heat
-Add rice, toss to coat
-Add diced tomatoes, 3 cups of vegetable broth
-Add onion powder and chili powder, salt and pepper to taste
-Stir well. Bring to simmer and then cover and let sit 20-30 minutes, stirring occasionally.
-Add cup of vegetable broth as needed to keep rice moist.
**I always keep the last cup in reserve, as it's easier to add liquid as it cooks than end up with soggy rice!**
