Chicken Enchilada Rice

Ingredients

    Chicken Breast, no skin, 2 breast, bone and skin removed
    La Victoria Enchilada Sauce, 2 1/4 cup
    *Green Chiles (diced), 4 oz
    Water, tap, 1 cup
    White Rice, Long Grain 2 1/4 cup
    Cheddar Cheese-shredded, 3 oz

Directions

Cut chicken into 1" pieces. Spray nonstick skillet with spray. Saute chicken until no longer pink. Pour enchilada sauce, diced chiles, and water into skillet. Bring to a boil. Simmer covered for 25-30 minutes. Stirring occasionally. Sprinkle shreded cheese on top cover and let it melt. Makes 10 1-cup servings
