Quinoa Cornbread

Ingredients

    1 c. blue cornmeal
    .5 c quiona meal
    .5 t. salt
    .25 t. baking soda
    .75 T. baking powder
    .5 T honey
    1 egg
    1.5 T olive oil
    1.25 milk (vinegar added for buttermilk)

Directions

Preheat oven to 425. Prepare quinoa meal by grinding raw quinoa in coffee grinder. Combine all dry ingredients. Add 1 T. vinegar to milk to make buttermilk. Combine all wet ingredients. Mix the two together.

Spray muffin tin with PAM.Cook until golden, about 25 min. Serve hot with butter.

For variation, add green chilies or relist.

Makes 12 muffins.
