Directions

Let rice soak overnight
Cook rice (2 cups will make 3-4 sushi rolls)
In a large bowl, combine rice, vinegar, and sugar. Let cool.

While rice is cooking, prepare a scrambled egg.
Cut carrots and cucumber lengthwise into 1/4" strips
Rinse spinach

On a bamboo mat, place nori. Spread cooled rice over nori with a fork.

Add whatever ingredients you want in the sushi roll: this recipe has "all" ingredients so will overestimate the calories unless you add something like cream cheese.

Roll the sushi. Cut into 8 pieces. This recipe is calculated for 1 piece of sushi: if you eat a roll, add 8 servings, if you eat 2 rolls, then 16 servings, etc.
