Minestrone Soup

Ingredients

    2 tbsp extra virgin olive oil
    2 medium onions, finely chopped
    2 cloves minced garlic
    2 medium carrots, peeled & diced
    2 medium celery stalks, diced
    2 medium potatoes, peeled & diced
    16 oz can diced tomatoes, no salt added (undrained)
    1 cup no salt added tomato sauce
    2 bay leaves
    2 tsp Italian seasoning
    15 oz can chickpeas, drained & rinsed
    1 cup frozen peas, thawed
    1 1/2 tsp dried parsley
    salt & pepper to taste (not included in nutrition calculations)

Directions

In a large pot, heat the oil over medium-low heat. Add the onions and saute until translucent, about 5 min. Add the garlic & continue to saute until both are golden.

Add the carrots, celery, and potatoes. Add just enough water to cover the ingredients. Stir in tomatoes, tomato sauce, bay leaves, & Italian seasoning. Bring to a rapid simmer, then cover; lower heat to simmer and cook 20-25 minutes, or until vegetables are just tender.

Add the chickpeas, peas, and parsley. Add water if soup has become too thick. Season with salt and pepper, if desired. Simmer another 20-30 minutes, or until vegetables are completely tender. Discard bay leaves & serve.
