6 corn tortillas
1 can enchilada sauce
3 boneless, skinless chicken breasts, boiled, shredded
3 oz. reduced fat cream cheese
1/4 c. low fat sour cream
1 c. shredded cheddar cheese
Combine chicken, cream cheese, and sour cream over medium heat. Stir until cream cheese has melted and mixture is combined. Add 1 tbsp. enchilada sauce to chicken mixture.
Prep an 8x10 baking dish by spraying with nonstick cooking spray.
Heat tortillas until easy to wrap.
Fill each tortilla with chicken, roll, and lay in dish seam side down.
Pour enchilada sauce over middle of rolled enchiladas.
Top with shredded cheese.
Bake 375 for about 20 minutes, or until cheese is melted and sauce bubbly.
