Introduction

Made in a slow cooker, adapted from a"Lazy Day Cookin' Slow Cooker Meals- 2002" recipe . Serve with sandwiches or a nice whole wheat french bread. Made in a slow cooker, adapted from a"Lazy Day Cookin' Slow Cooker Meals- 2002" recipe . Serve with sandwiches or a nice whole wheat french bread.

Ingredients

    6 potatoes, chopped
    2 carrots, chopped
    2 large onions, chopped
    1 stalk celery, chopped
    5 cups water
    salt and pepper to taste
    chicken oxo cubes, 4(I used chicken in a mug 4 tsp)
    .75 cup of shredded cheddar cheese
    13.5 oz low fat evaporated milk or non fat

Directions

Put every thing in slow cooker, except the milk and cheese. Cook on low for 8-10 or high for4-5 hours. In the last hour add the milk and cheese.

This makes a thin soup. I suggest if you want it richer or creamier use cream, half and half, or full evaporated milk; less water.

Makes about 10- 1 cup servings.
