Ingredients

    1/2 cup nonfat plain yogurt
    2/3 cup Splenda
    1 tsp. vanilla
    1/4 cup sugar-free cocoa
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 cup cold water
    2 egg whites

Directions

Preheat oven to 350. Spray 9 in square cake pan w/ nonstick cooking spray and set aside. In a large mixing bowl, combine yogurt, sugar, and vanilla, and beat on high speed for two minutes. Stir or sift together flour, cocoa, baking powder, and baking soda. Add to yogurt mixture alternately with cold water, beating until well combined. Using clean beaters, beat the egg whites in a small mixing bowl until stiff peaks form. Bake for 30 minutes or until set. Cool in pan for 10 minutes, then remove to wire rack for complete cooling. Dust with confectioner's sugar, if desired. Makes 12 servings.
