Spinach & Feta Pasta

Introduction

Light, creamy pasta dish best with fresh from the garden tomatoes. Light, creamy pasta dish best with fresh from the garden tomatoes.
Number of Servings: 4

Ingredients

    8 oz whole wheat pasta
    1 tsp olive oil
    1 clove garlic (or more if desired)
    3 cups chopped tomatoes
    1 cup sliced fresh mushrooms
    2 cups spinach leaves, packed
    salt and pepper to taste
    pinch of red pepper flakes
    6 oz reduced fat feta cheese. crumbled

Directions

Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.
Meanwhile, heat olive oil in a large skillet over medium high heat; add onion and garlic and cook until golden brown. Mix in tomatoes, mushrooms and spinach. Season with salt, pepper, and red pepper flakes. Cook 2 minutes more, until tomatoes are heated through and spinach is wilted. Reduce heat to medium, stir in pasta and feta cheest, and cook until heated through.
*shrimp or chicken can be added to this dish if desired.
