High Fibre Blueberry Pancakes

Introduction

According to everyone I have served these to they are the best pancakes. Picky eaters haven't even noticed the extra fibre.

Try using strawberries, bananas, or apples in place of blueberries. Banana is my favourite.

Number of Servings: 4

Ingredients

    .75 cups whole wheat flour
    .5 tsp salt
    4.5 tsp Splenda
    1.25 tsp baking powder
    .5 cups All Bran Buds (or crushed flakes)
    1 egg
    1.5 tbsp melted butter
    .5 cups soy milk
    .5 cup fresh or frozen blueberries

Directions

Crush all bran flakes or blend buds until mostly powder like. (flakes are much easier to crush, but buds are all we have in the house)
Combine dry ingredients and stir.
Combine wet ingredients, beat lightly.
Stir in fruit.
Combine wet mixture into dry mixture, stir until blended.
Ignore lumps.

Drop batter by spoonfuls onto a hot griddle.
Once they start to bubble (about 2-3 mins) flip cakes to other side.
Once browned remove and serve.
If they can't be served right away keep in warm oven, covered with a tea towel.
