8 medjool dates, chopped 1/4 cup walnuts, chopped 2 tbsp. coconut oil, melted 1 tbsp. ground flax mixed with 3 tbsp. water 1/4 c. water 1/2 tsp. vanilla 1 c. oat flour (grind up 1 cup rolled oats) 1 tsp. baking powder 1/4 tsp. salt 1 tsp. cinnamon
Mix together dates, nuts, oil, flax "egg", water and vanilla. Mix flour, baking powder, salt and cinnamon. Add flour mixture to first mixture. Mix. Bake on greased cookie sheets at 350 degrees for 15 to 20 minutes.
I really liked these cookies. They are not very sweet, but the dates give them just enough sweetness. My husband really liked them as well. They are easy to make and have a chewy texture once they're done.
