Cottage Cheese Pancakes

From Eat Clean Diet Cookbook by Tosca Reno.

I didn't have any maple flakes so I substituted stevia and I didn't have 8 egg whites as specified, so I used 5 whites and Egg Beaters to make up the difference.

Ingredients

    Whole Wheat Flour, 1.25 cup (remove)
    Baking Powder, 1 tsp (remove)
    Cinnamon, ground, .5 tsp (remove)
    Stevia powder, 1 serving (remove)
    Salt, .125 tsp (remove)
    All Whites (Liquid Egg Whites), 1.25 cup (remove)
    Egg substitute, liquid (Egg Beaters), .75 cup (remove)
    Cottage Cheese, 1% Milkfat, 1 cup (not packed) (remove)
    Archer Farms Non Fat Plain Yogurt, 1 cup (remove)
    Cooking Spray

Directions

Combine dry ingredients in a large mixing bowl. Make a well in the center.

Combine remaining ingredients in a small bowl. Pour into well in the other bowl. Stir just until moistened.

Heat a nonstick skillet or griddle with cooking spray. Heat should be medium high. Use 1/4 C of batter for each pancake. Cook until lightly browned on both sides.

Serve with fruit
