White Ziti

Ingredients

    12oz package whole wheat penne pasta, prepared
    1 whole roast chicken, boned, skinned & shredded
    8 oz mushrooms, sliced
    2 pound bag frozen chopped broccoli
    1 red bell pepper, chopped
    1 small onion, chopped
    2-3 cloves garlic, minced
    1/4 cup flour
    1/4 cup butter
    2 cups chicken stock
    4 oz velveeta light, cubed.

Directions

Saute mushrooms in large pan over medium-high heat with non-stick spray until golden. Remove to large mixing bowl.
Saute onions and garlic in same pan until almost soft. Add peppers and continue cooking until just tender. Remove to bowl.
Toss broccoli in pan to heat (skip this if using fresh broccoli).
Add broccoli, chicken and pasta to same bowl.
In skillet, melt butter over medium to medium-high heat. Whisk in flour until coated. Cook for 1 minute. Add chicken broth and whisk until thick. Stir in velveeta until melted.
Pour sauce over veggies, pasta and chicken and toss to combine.
Pour into 2 large baking dishes. Top with a sprinkling of bread crumbs if desired. Bake at 350 for 20 minutes or until bubbly and hot.

We do one for dinner and freeze the second before baking. Then we go from freezer directly to oven, bake for about 45 minutes to an hour, again until hot and bubbly.
