Number of Servings: 4

Ingredients

    1 extra large zucchini, cut lengthwise
    5 medium carrots, cut lengthwise
    2 portabella mushrooms, sliced
    2 medium summer squash, cut lengthwise
    1 tbsp extra light olive oil

Directions

warm 1 tbsp olive oil over medium heat, add carrots
After about 3 minutes, add mushrooms.
After 3 more minutes, add zucchini and squash.
Saute for about 5 additional minutes or until done.

Toss frequently.
