Sweet Pepper Relish

Introduction

A nice flavorful, sweet garnish or topper. A nice flavorful, sweet garnish or topper.

Ingredients

    Sweet peppers - about 2 cups worth after being minced (multiple colors make the dish more eye catching)
    Sweet onion (medium)
    Balsamic vinegar (or cider vinegar) 1/2 cup
    Splenda 1/4 cup (to taste really
    Salt 1/2 tsp
    Water 1 cup

Directions

Using a food processor mince the peppers and the onion. (you can do it by hand, but cut them up fine) put in a sauce pan. Add the vinegar, water, splenda and salt. Bring to a boil. Turn down and simmer until the peppers are tender. Remove from heat and strain out excess liquid. Ready to use, or refridgerate.
