Bulgarian Ghivetch #2

Number of Servings: 16

Ingredients

    1 large potato (abt. 10 oz)
    2 medium turnips
    1 large onion
    3 cups green beans
    1 large green pepper
    2 cloves garlic
    2 sprigs fresh rosemary
    1 tsp dried thyme
    .5 tsp red pepper
    1 can diced tomatoes
    2 cups tomato sauce

Directions

Preheat oven to 350 degrees.

Peel and chop the various vegetables into pieces about 1/2 inch cubed. Place raw vegetables in a large Pyrex baking dish. Add thyme and red pepper to canned tomatoes or tomato sauce and pour over the top of the vegetables. Place fresh rosemary on top.

Cover tightly with foil and bake for about 1 hour. Remove from oven, and pour the tomatoes over the top. Re-cover, but this time create a vent to release some steam.

Cook for 15-30 minutes more, or until the vegetables are tender.

Makes 16-cup servings
