Ingredients

2 lbs. hamburger
1 pouch stuffing mix, chicken flavor
1 egg
1 can rotel tomatoes with chiles
1 tbsp chili powder (or 1/2 chili powder, 1/2 taco seasoning)
water
Directions
Mix hamburger, stuffing mix, egg, tomatoes (undrained) and chili powerd together. If mixture is dry, add water as needed.
shape into loaf pan, and bake at 400 for about 30-45 minutes, or until cooked through. (I cook until internal temp is 160, but I use that temp for all meat)
We like to serve this with green beans, and spanish rice.

Fixed this for supper this evening and my family thought it was excellent. Would definitely fix this one again. My family liked the added spice a lot. Used real lean ground beef and had it with the traditional mashed potatoes, gravy and green beans, still had only 389 calories for the whole meal - 1/29/08
