Introduction

I took this from my chicken and noodle soup recipe. I left out the noodles, flour, and salt. And turn this into a low carb soup. I took this from my chicken and noodle soup recipe. I left out the noodles, flour, and salt. And turn this into a low carb soup.

Ingredients

    7 1/2 oz chicken breast, cooked and diced
    1/2 c chopped onion
    2 oz carrots thinly sliced
    2 oz chopped celery
    1 (14oz) can chicken broth, low sodium
    1/2 t parsely

Directions

In a small sauce pan, spray with cooking spray and saute onion and carrots. Pour in broth and cook until carrots are tender. Add celery and chicken, bring back to boiling.

Makes 3 (1 c) servings
