Goat Cheese, Onion and Spinach Quesadilla

Introduction

Carmelized onions, goat cheese, fresh spinach and tomatoes make this quesadilla irresistable! Carmelized onions, goat cheese, fresh spinach and tomatoes make this quesadilla irresistable!
Number of Servings: 4

Ingredients

    4 8 inch whole wheat tortillas, 6 oz fresh spinach, 2 thinly sliced onions, 2 thinly sliced tomatoes, 1 t sugar, 1/4 t salt, 1 T olive oil, 1 T water

Directions

Heat 1 T olive oil in skillet, add onions, sugar and salt. Cook until lightly browned; remove and set aside. Add 1 T water and Spinach; cook until just wilted. Remove and set aside. On half tortilla shells, spread 1 oz goat cheese on each, add tomatoes, onions, and spinach. Fold in half, cook in skillet until until lightly browned and crisp. 1 Quesadilla is 1 serving.
