Groundnut Stew

Ingredients

    2 tbsp olive oil, divided
    3 skinless, boneless chicken, cut into ¾” pieces
    1 1/2 tsp cumin (more to taste)
    2 medium onions, diced
    1 green pepper, coarsely chopped
    4 cloves garlic, coarsely chopped
    4 medium carrots, sliced into ¼” rounds
    1 med sweet potato, cut into ¾” pieces
    1” fresh ginger, peeled and smashed
    14.5oz can low-sodium diced tomatoes
    4 cups fat free chicken broth, divided
    1 cup natural peanut butter
    2 tbsp tomato paste
    Freshly ground pepper, to taste
    1 10oz box frozen sliced okra, thawed

Directions

Spray 4 qt pot with Pam, add 1 tbsp olive oil, and heat to med high. Season chicken with cumin, and brown in pot. Remove chicken and set aside. Pour another tbsp olive oil into pot, and add onions, green pepper and garlic sautéing until fragrant (around 2mins). Add carrots, sweet potato and ginger, and stir. Add diced tomatoes, 2 cups chicken broth, and reserved chicken. Whisk together remaining 2 cups of chicken broth, tomato paste and peanut butter, and add to pot. Bring to slow boil, reduce heat and simmer for 40 minutes. Add okra and simmer for 20 minutes.
