Introduction

Brown Rice, ground beef, tomatoes & fresh spinach - all together in a warm skillet. Brown Rice, ground beef, tomatoes & fresh spinach - all together in a warm skillet.
Number of Servings: 6

Ingredients

    93% Lean Ground Beef - 1.25 lbs (20 oz.)
    Green Onions (chopped) - 3/4 cup
    Brown Minute Rice - 2 cups (uncooked)
    Beef Broth (Fat Free) - 2 cups
    Black Pepper - 1 Tbsp.
    Canned Tomatoes (diced) - 1 can
    Fresh Spinach - 1/4 cup
    Parmesan Cheese (Shredded) - 12 Tbsp.


Directions

Brown ground beef & onion in large skillet. Stir in beef broth & rice. Season with black pepper. Bring to a boil, then simmer (covered) for 5 minutes. Stir in tomatoes & spinach & simmer for 5 more minutes. Serve with parmesan cheese on top.
Makes 6 servings (approximately 1.5 cups each).
