Savory Ham and Rice

Introduction

This is a great way to use leftover ham! This is a great way to use leftover ham!
Number of Servings: 4

Ingredients

    1 cup chopped carrot
    3/4 cup water
    1/2 cup chopped onion
    1/2 cup chopped green or red bell pepper
    1 can Campbells healthy request Cream of Celery soup
    12 oz lower fat, lower sodium ham, cubed
    1 cup brown Minute rice
    1/4 t ground sage
    1/8 t black pepper
    paprika

Directions

1. In a medium saucepan bring water to a boil. Add carrot, onion, and pepper. Boil 5 minutes, until crisp tender. Do not drain.
2. Add all other ingredients (except paprika). Spoon into a 1 qt casserole. Sprinkle with paprika. Bake covered in a 350 oven for 30 or 35 minutes, until rice is tender and mixture is heated through.

Makes 4 servings of about 10 oz each..
