Slow-Cooked Meatballs

Introduction

Meatballs just the way my mom makes. Boiling and then slow-cooking in sauce eliminates a lot of the fat that you get when you pan-fry them first. You can substitute ground turkey as well, but nutritional info is for beef. These meatballs also freeze very well! Meatballs just the way my mom makes. Number of Servings: 16

Ingredients

    1 to 1-1/4 lb 93% lean ground beef
    1 extra-large egg
    1/4 cup dry seasoned bread crumbs
    1 tbsp grated parmesan cheese
    2 cloves minced garlic
    1 tbsp dried Italian Seasoning
    Sauce of your choice (not included in nutritional info)

Directions

1. Thoroughly mix all ingredients in a large mixing bowl. Form into 1 oz. balls.

2. Drop balls into boiling water. As soon as they begin to turn grayish, remove with a slotted spoon and place into a large pot of simmering pasta sauce.

3. Keeping the sauce on low heat, cook meatballs for approximately 2 hours or until no longer pink inside, stirring occasionally. Serve with your favorite pasta.

1 lb of meat makes approximately 16 1-oz meatballs.
