Baked Zucchini Boats

Ingredients

    1 medium/large Zucchini
    1/2 cup diced Red Ripe Tomatoes
    1/4 cup diced Peppers, sweet, red, raw, sliced
    1 Large Mushrooms, diced
    1/4 cup Tomato Sauce

Directions

Slice Zucchini in half. Scoop out inside pulp. Microwave zucchini boat for 3 minutes. Chop zucchini pulp and mix it with the other vegetables. Saute until all are soft. Mix in tomato sauce. Scoop into zucchini boat and bake for 15 minutes at 350 degrees. For added taste & calories sprinkle with cheese (not included in calorie count).
