Spicy Tomato Soup

Introduction

Delicious non-dairy Vegetarian soup. Easy to make. Delicious non-dairy Vegetarian soup. Easy to make.
Number of Servings: 6

Ingredients

    1 TBS olive oil
    1 1/2 cups minced onion
    5 cloves of garlic
    1/2 tsp salt
    1 tsp dried dill (or more to taste)
    lots of fresh ground pepper
    28 oz. can crushed tomatoes
    2 cups water
    1 TBS honey


Directions

1. Heat olive oil in a kettle or a dutch oven. Add onion, garlic, salt, dill and black pepper. Stir over medium heat for about 5 to 8 minutes, until the onions are translucent.
2. Add canned tomatoes, water and honey. Cover and simmer over low heat 20 to 30 minutes.
Makes six 1 cup servings.
