Sweet Curried Corn

Ingredients

1 tbsp butter
1/4 cup low sodium chicken broth
1 medium onion ,diced
1 medium red pepper, diced
2 -12oz cans corn, drained
1 1/2 tbsp curry powder
1 1/2 tsp garlic powder
Directions
Melt butter in large skillet over high heat. Add chicken broth, onion and red pepper and saute for 2 min. Add corn and cook for 7-10 minutes, until corn browns slightly at the edges. Add curry and garlic powder. Mix and serve. Makes 4 side-dish servings.
