Salmon Patties

Ingredients

    1 (1lb) can red or pink salmon, drained and flaked
    8 saltine crackers, crushed
    1 egg, beaten
    1 tbs lemon juice
    1/4 tsp salt
    1/4 tsp pepper
    2 tbs extra-virgin olive oil

Directions

Coat pan with extra-virgin olive oil. Heat over medium heat. Combine all remaining ingredients in a bowl. Form salmon mixture into 4 patties. Cook patties until brown, about 8 minutes on each side.
