Introduction

Quick and perfect for a cold day, low cal and very tasty!!! Lime in this dish gives it extra flavor!! Quick and perfect for a cold day, low cal and very tasty!!! Lime in this dish gives it extra flavor!!

Ingredients

    1 chicken breast cubed/shredded
    2 cans chicken stock/broth
    tomato, chopped
    1/3 cup rice
    1/3 cup frozen corn
    shredded monterey cheese
    1 lime

Directions

add chicken, stock, tomato, rice and corn to stock pot, bring to boil, turn down and simmer until rice is tender. sprinkle cheese in bottom of bowl, add soup, squeeze lime over soup and serve with tortilla chips crumbled on top.
