Introduction

Kumara is the name of our sweet potato.
This is a fantastic and healthy way to eat a scone.

Number of Servings: 16

Ingredients

    225 gms self raising flour
    1/2 tsp salt
    1 tsp sugar
    45g unsalted butter
    1 cup of kumara or sweet potato
    150ml buttermilk low fat

Directions

Sift flour & sugar and salt into bowl.
rub in butter with finger tips till it looks like fine bread crumbs
Add Kumara and milk to make a sticky dough.
Do Not over work it.
Place on floured bench and pat out to a 1.5 cm thickness.
Place on floured tray & bake in preheated oven 200c for 8 -> 10 mins
Enjoy.
