Mikey's Baked Chicken w/ veggies

Introduction

Traditional baked chicken breast with roasted sweet and regular potatoes, carrots, onion and garlic. Traditional baked chicken breast with roasted sweet and regular potatoes, carrots, onion and garlic.
Number of Servings: 4

Ingredients

    16 ounces chicken breast (cut into 4 oz portions)
    Salt and Pepper to taste
    1 t. ground rosemary
    2 potatoes, peeled
    2 sweet potatoes, peeled
    20 Baby carrots
    3 cloves Garlic, smashed
    .5 onion, cut in large chunks
    1 T. fresh lemon juice
    1 T Canola Oil

Directions

Preheat oven to 375 degrees. Wash chicken and pat dry. Rub all over with oil. Place in 9x13 baking pan. Generously salt and pepper. Sprinkle with rosemary. Squeeze lemon juice over chicken. After peeling and chopping veggies, place in a bowl and use remaining oil to coat. Make sure to generously salt and pepper them too. Place in baking dish all around the chicken. Bake for 60 minutes or until sweet potatoes and potatoes are cooked.
