2 tbsp olive oil
2 large carrots, peeled and diced
1 large onion, diced
3 cloves garlic
7 oz. kielbasa sausage
6 cups water
2 cups lentils, picked over and rinsed
one 28 oz. can tomatoes with liquid
2 tsp dried thyme
1 1/2 tsp balsamic vinegar
1 tsp ground black pepper
heat oil, add veggies. stir in water, lentils, tomatoes, thyme & cayenne pepper.
Bring to a boil, reduce the heat, and simmer until lentils are tender, 30-45 minutes. Stir in kielbasa, balsamic vinegar, and black pepper. Cook for 5 minutes or until sausage is heated.
