Cajun Meatloaf

Ingredients

3 bell peppers, any color
2 medium onions
1 bunch celery (5-6 ribs)
8-10 cloves of garlic
3 eggs
6 tbsp butter
1-2 cups breadcrumbs
ground nutmeg
black pepper
cayenne pepper
salt
1/2 c. milk
1 tbsp. worcestershire
1 1/4 c. ketchup
2 tbsp. honey
2 lbs. lean ground beef
1 lb. ground turkey

Directions
Dice produce and mince garlic. Add butter to a skillet over medium-high heat. Once butter is melted and browning, add the veggies and garlic and 1 tbsp. salt. Cook for a few minutes. Then add 1 tsp. black pepper, 1 tsp. nutmeg, 1 tbsp. worcestershire & 1 tsp. cayenne. Stir. Add 1/2 c. ketchup and a little hot sauce if desired. Stir. Cook for 2 minutes. Remove from heat. Add 1/2 c. milk. Stir. Add 1 c. breadcrumbs. Stir. Continue adding breadcrumbs until it is a nice thick paste. Put meat in a large mixing bowl. Beat the 3 eggs and add to meat. Preheat oven to 400 degrees. After veggies are cooled, add to the meat and eggs and mix until well blended. Form a loaf on a pan treated with non stick spray. Mix 3/4 c. ketchup and 2 tbsp. honey. Spread over the loaf. Bake at 400 degrees for 40 minutes.
