Pilafi - Greek lemon rice

Number of Servings: 4

Ingredients

    1 cup brown rice
    2 T olive oil
    1 tsp. salt
    3 T lemon juice (or more to taste)
    2 1/4 C chicken stock

Directions

Use a heavy pan with a tight fitting lid. Saute rice in olive oil for 2 minutes. Add salt and lemon juice and saute 1 minute more. Add chicken stock, bring to a boil, reduce heat to a simmer 40 minutes. Do not lift lid!


Since you are using brown rice it will probably take 45-50 minutes.
